This collection of recipes works especially well for Easter, Mother’s Day, a lady’s luncheon, or any spring celebration. The first signs of early spring bring a refreshing, welcome change—longer days, budding trees, and open windows letting in the warm (sometimes), fresh air. A time where everything feels lighter and brighter, even hopeful, is perfect for gathering friends and family for a delightful spring brunch.

Hosting should be as enjoyable for you as it is for your guests! The key to a smooth and stress-free gathering is planning ahead. Here are some essential tips and my menu ideas. Welcome Spring, indeed!
1. Create your Menu & Shopping List
- Choose a mix of make-ahead dishes, freshly prepared foods and items you purchase and can place on a pretty platter (looking at you, grocery store fruit bowl). Have a balance of sweet and savory, meat and veggie options to please all tastes.
- Here’s my menu:
- Appetizer – Avocado Toast on Sourdough
- Main – Zucchini & Egg Sheet Pan Roll
- Main – Quiche Lorraine
- Salad – Mixed Green Salad with Orange and Sweet & Spicy Bacon
- Side – Cheesy Hashbrown Waffles
- Dessert – Seasonal Fruit
- Dessert – Almond Croissants
2. Prep the Day/Night Before
- Bake sourdough bread
- Shred zucchini, place in cheesecloth/strainer over bowl in fridge
- Brown breakfast sausage
- Chop vegetables for casserole and salad
- Make sweet & spicy bacon
- Make salad dressing
- Make almond filling for croissants
3. Table Setting & Decor
- Set out table linens, plates, napkins, and utensils. Crisp, white plates and platters are my go-to, they let the food shine. I choose fun colors, prints and designs for napkins to bring in a festive touch.
- Decorate with fresh flowers in simple, pastel bud vases to bring the Spring vibe up a notch.
- Decide which serving platters will be used for each dish – I often lay them out and write the name of the dish on a post-it note to stick on the platter.

5. Keep It Simple & Enjoy
With a little preparation, your spring brunch will be a beautiful and stress-free occasion. Your guests won’t just compliment the food; they’ll appreciate the relaxed, present host who made the gathering truly special. All because you planned ahead and executed flawlessly 😉
